Maple Soy Glazed Salmon

I tried this for the first time on Sunday. Here’s what you’ll need. This is for 2 people, just multiply the ingredients accordingly if you need to make more.

  • 2 Salmon fillets, skin off
  • 1/4 cup low sodium soy sauce
  • 1/2 cup Maple Syrup
  • 1 Tbs rice vinegar
  • 1 Tbs Extra Virgin Olive Oil

Add all the wet (except the olive oil) ingredients into a bowl and stir together, add the salmon fillets to the marinade. Let sit for 1 to 2 hours, covered in the fridge.

In a non-stick frying pan, add the olive oil, use medium heat. You don’t want to go too hot for fear of burning the maple syrup. Add your salmon and cook for a total of 10 to 12 minutes flipping it over every 3 minutes. I found that using smaller cut fillets worked well, because I could fry them for 3 mintues on each side and didn’t end up burning them. Add about 1/4 of the marinade in the last 2 minutes of cooking to give the salmon that nice shiny glaze.

Add a couple of your favourite side dishes and you’re done.
